Ingredients

For the salad

  • 150 g baby spinach
  • 300 g strawberries, hulled and sliced
  • 100 g feta, crumbled
  • 1/3 cup sliced almonds, lightly toasted

For the honey vinaigrette

  • 3 tbsp extra-virgin olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • Salt and pepper to taste

Instructions

    Whisk all the vinaigrette ingredients in a small jar until emulsified. Taste and adjust the honey or vinegar to balance.

    Pile the spinach into a wide shallow bowl. Scatter the strawberries, feta, and toasted almonds over the top.
